Tomato / Thakali aviyal

Ingredients

  1. Tomato - 4
  2. Onion - 1 medium size
  3. Green chillies - 2
  4. Grated coconut - 1 cup
  5. Jeera - 0.5 tbsp
  6. Turmeric powder - 0.4 tbsp
  7. Red chilli powder - 1 tbsp
  8. Fenugreek powder - 0.5 tbsp
  9. Shallot - 2
  10. Coconut oil - 1 tbsp
  11. Curry leaves - 1 twig
  12. Water - 1.5 cup
Procedure
  1. Cut tomato and onion thinly into long slices
  2. Cut the green chillies vertically into two haves
  3. Grind coconut, jeera, turmeric, red chilli powder and shallot into smooth paste adding very little water.
  4. Mix cut tomato, onion, green chillies and the ground mixture along with salt.
  5. Add water. Cover and cook the aviyal in low flame. 
  6. It will take atleast 7-8 minutes for the tomato and onion to cook completely.
  7. Add fenugreek powder and mix again
  8. Add salt as required
  9. Now add the curry leaves and drizzle coconut oil on top of the aviyal.
  10. Yummy tomato aviyal can be served with rice.
Note: Small amount of tamarind juice can be added to this aviyal in the end if you prefer more sour taste.
