Ingredients
- Tomato - 4
- Onion - 1 medium size
- Green chillies - 2
- Grated coconut - 1 cup
- Jeera - 0.5 tbsp
- Turmeric powder - 0.4 tbsp
- Red chilli powder - 1 tbsp
- Fenugreek powder - 0.5 tbsp
- Shallot - 2
- Coconut oil - 1 tbsp
- Curry leaves - 1 twig
- Water - 1.5 cup
Procedure
- Cut tomato and onion thinly into long slices
- Cut the green chillies vertically into two haves
- Grind coconut, jeera, turmeric, red chilli powder and shallot into smooth paste adding very little water.
- Mix cut tomato, onion, green chillies and the ground mixture along with salt.
- Add water. Cover and cook the aviyal in low flame.
- It will take atleast 7-8 minutes for the tomato and onion to cook completely.
- Add fenugreek powder and mix again
- Add salt as required
- Now add the curry leaves and drizzle coconut oil on top of the aviyal.
- Yummy tomato aviyal can be served with rice.
Note: Small amount of tamarind juice can be added to this aviyal in the end if you prefer more sour taste.
