- Jeera rice / Sona masoori rice / Basmathi rice : 1.25 cup
- Tomato: 4 red ripe ones
- Ginger - 1 piece grated
- Onion - 1 medium
- Red chilli powder - 1 tbsp
- Coriander powder - 1 tbsp
- Green chilli - 1
- Cashew nuts . - 5
- Channa dal - 1 tsp
- Jeera - 1 tsp
- Asafoetida / Hing - 1 tsp
- Mustard - 1 tsp
- Curry leaves - 1 twig
- Coriander leaves - 1 twig
- Mint leaves (optional )- 1 twig
Procedure
- Heat oil in a pan
- Splutter mustard
- Add jeera and chana dal
- Then add cashew
- When chana dal and cashew nut has browned on both sides, add green chilli, ginger and curry leaves
- Add onion and fry till it becomes transparent
- Cut tomato into small pieces
- Add tomato and cook till it becomes mushy
- Add red chilli, coriander, asfoetida and turmeric powder
- Add salt
- Stir for few minutes till the raw smell goes away.
- Add coriander and mint leaves and mix well.
- Add cooked rice (in room temp) and mix well.
- Yummy tomato rice is ready to be served with raita.
