Ingredients
- Kanava - 250 gms
- Grated coconut - 1 cup
- Shallot - 20 or 1 cup
- Onion - 1 medium
- Ginger - 1 inch
- Green chillies - 1
- Garlic - 5 cloves
- Turmeric powder - 0.25 tbsp
- Chilli powder - 1 tbsp
- Coriander powder - 1.5 tbsp
- Tamarind - half gooseberry size
- Fenugreek powder - 0.25 tsp
- Fennel seed powder - 0.25 tsp (optional)
- Mustard - 0.25 tsp
- Oil - 1 tbsp
- Coconut - 1 twigs
- Water
Procedure
- Clean the squid and cut it into either square or circle pieces
- Cook the squid in water and salt in medium flame. This may take at least 20 mins
- In the mean time, cut shallot, ginger, garlic and onion into small pieces
- Cut green chillies vertically
- Heat oil in a pan and splutter mustard and curry leaves
- Add shallots, ginger, garlic and green chillies and stir till shallots have become soft
- Add onion and salt to this mixture. Fry till onion turns golden brown.
- Add turmeric, red chilli powder, coriander powder and fennel powder
- Stir till the raw smell vanishes
- Add coconut to this mixture.
- Add the cooked squid to this and mix well
- Add tamarind water (very little) to this mixture.
- Stir till the whole mixture get a golden colour.
- Add salt as required
- Add fenugreek powder, coconut oil and curry leaves and stir for another two minutes.
- Yummy kanava thoran is ready to be served with rice.
Note:
- Make sure that onion and shallots have fried well.
- Adding more onion adds to the taste.
