Kanava / Squid thoran

Ingredients
  1. Kanava - 250 gms
  2. Grated coconut - 1 cup
  3. Shallot - 20 or 1 cup
  4. Onion - 1 medium
  5. Ginger - 1 inch
  6. Green chillies - 1
  7. Garlic - 5 cloves
  8. Turmeric powder - 0.25 tbsp
  9. Chilli powder - 1 tbsp
  10. Coriander powder - 1.5 tbsp
  11. Tamarind - half gooseberry size
  12. Fenugreek powder - 0.25 tsp
  13. Fennel seed powder - 0.25 tsp (optional)
  14. Mustard - 0.25 tsp
  15. Oil - 1 tbsp
  16. Coconut - 1 twigs
  17. Water 
Procedure
  1. Clean the squid and cut it into either square or circle pieces
  2. Cook the squid in water and salt in medium flame. This may take at least 20 mins
  3. In the mean time, cut shallot, ginger, garlic and onion into small pieces
  4. Cut green chillies vertically
  5. Heat oil in a pan and splutter mustard and curry leaves
  6. Add shallots, ginger, garlic and green chillies and stir till shallots have become soft
  7. Add onion and salt to this mixture. Fry till onion turns golden brown.
  8. Add turmeric, red chilli powder, coriander powder and fennel powder
  9. Stir till the raw smell vanishes
  10. Add coconut to this mixture.
  11. Add the cooked squid to this and mix well
  12. Add tamarind water (very little) to this mixture.
  13. Stir till the whole mixture get a golden colour.
  14. Add salt as required
  15. Add fenugreek powder, coconut oil and curry leaves and stir for another two minutes.
  16. Yummy kanava thoran is ready to be served with rice.
Note:
  1. Make sure that onion and shallots have fried well.
  2. Adding more onion adds to the taste.
