Ingredients
- Kovakka / Coccinia - 100 gms
- Grated coconut - 1/2 cup
- Jeera - 1 tsp
- Red chilli powder - 1/2 tbsp
- Red chilli - 1
- Turmeric powder - 1 tsp
- Shallot - 5
- Green chilli - 1
- Curry leaves
- Mustard - 1 tsp
- Oil
- Water
Note: Instead of shallot, 3 cloves of garlic can also be used.
- Clean and cut coccinia into small pieces.
- Cut shallots to small pieces
- Pulse coconut, red chilli powder, turmeric powder, 3 shallot, green chillies 3 times for 2 seconds. It should not be smooth paste.
- In a pan, cover and cook coccinia and water just enough to cover the coccinia
- When coccinia is about to be cooked completely, add the ground coconut paste and cook for another 5 minutes. Mix well and switch off the stove.
- In a separate pan, heat oil, splutter mustard
- Add remaining shallots, red chilli, curry leaves and fry for a minute till shallot starts to brown.
- Add this tempering on top of the cooked coccinia. Mix well.
- Yummy kovakka / coccinia thoran is ready to be served with rice.
