Ladies finger / Okra / Vendakka aviyal

Ingredients


  1. Ladies finger / Okra / Vendakka - 20
  2. Onion - 1 medium size
  3. Green chillies - 3
  4. Grated coconut - 1 cup
  5. Jeera - 0.5 tbsp
  6. Turmeric powder - 0.4 tbsp
  7. Red chilli powder - 1 tbsp
  8. Shallot - 2
  9. Coconut oil - 1 tbsp
  10. Curry leaves - 1 twig
  11. Water - 1.5 cup
  12. Tamarind - half lemon size
  13. Salt to taste
Procedure
  1. Cut Okra and onion thinly into long slices
  2. Cut two green chillies vertically into two haves
  3. Grind coconut, jeera, turmeric, red chilli powder, one green chilli and shallot into smooth paste adding very little water.
  4. Mix cut okra, onion, green chillies and the ground mixture along with salt.
  5. Add water. Cover and cook the aviyal in low flame. 
  6. It will take atleast 10 minutes for the okra and onion to cook completely.
  7. Add tamarind juice when the aviyal is half cooked.
  8. Add salt as required
  9. Now add the curry leaves and drizzle coconut oil on top of the aviyal.
  10. Yummy vendakka aviyal can be served with rice.
