Ingredients
- Rice (Sona masoori / Jeera sambha / Basmathi) - 0.5 cup
- Lime juice - 2 tbsp
- Ginger - 1inch
- Chana dal - 1 tsp
- Urd dal - 1 tsp
- Mustard - 1 tsp
- Curry leaves - 1 twig
- Coriander leaves
- Cashew nuts -5
- Green chilli - 1
- Oil - 1 tbsp
- Salt
- Onion - 1 medium
- Asafoetida / Hing - 1 pinch
- Turmeric powder - 1 tsp
- Grated coconut - 3 tbsp
Procedure
- Cut onion, green chillies and ginger into small pieces
- Cook rice with salt and keep aside for cooling
- Heat oil in a pan, splutter mustard
- Add urd dal, chana dal and cashew nut into the pan.
- When the cashews and dal have browned add cut onion, green chillies and ginger
- When the onion becomes soft, add hing and turmeric powder
- Add rice to this and mix well
- Add coconut to this and mix well
- Add lemon juice and mix again.
- Add coriander leaves on top of the rice
- Yummy lemon rice is ready to be served with potato fry / potato chips and pickle.
