- Chicken (Boneless) - 0.5 Kg
- Red chilli powder - 3 tsp
- Coriander powder - 1.5 tsp
- Garam masala powder - 0.5 tsp
- Onion - 1 large
- Shallot - 0.5 cup
- Tomato - 1
- Green chillies - 2
- Ginger - 2 inch
- Garlic - 5 cloves
- Salt
- Curry leaves - 2 twigs
- Water - 0.5 cup
- Oil

- Red chilli powder - 0.5 tsp
- Pepper powder - 0.5 tsp
- Turmeric powder - 0.25 tsp
- Lime - 1 tsp
- Salt

- Red chilli - 2 tsp
- Pepper powder - 1 tsp
- Fennel seeds - 0.5 tsp
- Onion - 1 small
- Garam masala - 1/4 tsp
- Fenugreek powder - 1/4 tsp
- Oil - 1 tsp
Procedure
- Clean chicken well.
- Cut chicken in small pieces.
- Marinate chicken with all ingredients mentioned under "Ingredients for marination" for a minimum of 30 minutes in a refrigerator.
- Cut onion into thin slices.
- Cut green chillies vertically.
- Cut tomato into small pieces.
- Cut shallots into thin slices.
- Crush ginger and garlic into a paste
- Heat oil in a pan.
- Add ginger garlic paste into this.
- When the raw smell leaves, throw in shallot, onion, green chillies and curry leaves.
- Fry till onion turns golden brown.
- Now, add tomato and fry till it becomes mushy.
- Add red chilli, coriander and garam masala powders and fry for a minute.
- Add chicken to this.
- Stir the chicken till it turns white on all sides.
- Add water to this.
- Cover and cook for 10 minutes.
- Open the lid and cook till all the water has almost evaporated.
- In the mean time, heat oil in another pan.
- Add red chilli broken into two or three pieces into the oil.
- Add fennel seeds to this and stir for a minute.
- Add onion and fry till it turns brown.
- Add pepper, fenugreek and garam masala powder to this.
- Add this into the other pan with chicken.
- Mix well for another 5 minutes or till the colour becomes deep brown.
- Sprinkle some more curry leaves to the dish.
- Yummy chicken ularthiyathu is ready to be served with rice or chappathi
