- White Mushroom - 300 gms
- Butter - 4 tsp
- Onion – 2 Medium – Small pieces
- Coriander leaves – half cup
- Cream - 2 tsp
- Lemon - 1
- Corn Flour - 2 tsp
- Black pepper -1 tsp
- Ginger - 1 tsp
- Salt - As required
- Water - 3 cups
- Coconut milk – 1 cup
- Salt- As needed
Procedure
- Heat butter in a pan.
- Add ginger paste and fry for 20 seconds.
- Add onion and fry till it is pink.
- Cut mushrooms into small pieces.
- Add cut mushroom pieces.
- Add salt and pepper. Fry for 10 minutes or till mushroom is cooked.
- Take half mushroom from the above preparation, add one cup of water. Grind it in a mixie.
- Add this to the pan along with the remaining mushroom mix.
- Add 3 cups (200 ml/cup) of water and continue to heat in medium flame
- In a bowl prepare corn floor paste, by adding corn floor and 2 tsp water. Add the corn flour paste into the pan and continue heating
- Add cream and coriander leaves.
- Heat for 2-3 minutes till the soup is thick, as required
- Add 2 spoons of lemon juice into the pan and heat for 1 minute.
- Yummy mushroom soup is ready to be served.
