Ingredients
- Penne Pasta - 1 cup
- Tomato - 4
- Onion - 1 small
- Garlic - 3 cloves
- Italian seasoning - 1 tbsp
- Chilli flakes - 1 tbsp
- Salt
- Oil
- Butter - 1 tbsp
- Tomato ketchup - 1 tbsp
- Parmesan Cheese - 2 tbsp (optional)
- Water - 3 cups
- Vegetables
- Brocolli - 5 florets
- Capsicum - 1/4 of a medium sized one
- Baby corn - 3
- Blanch the tomatoes
- Cut X mark on the tomato
- Boil it in water for 5 minutes or till the skin peels out. Water should cover the entire tomatoes.
- When it has cooled, remove the skin
- Blend the tomatoes into a smooth puree in a mixie
- In a deep pan, add the pasta. Add 3 cups of water to this along with salt.
- Boil the pasta for 15 minutes in medium flame.
- Remove from the stove and add cold water to it.
- Drain the pasta and keep aside.
- Cut onion and garlic into small pieces.
- Also, cut the vegetables into small pieces.
- In a pan, heat oil.
- Add garlic and fry for few seconds.
- Add onion into this and fry for few minutes till it turns transparent.
- Add tomato puree to this and cook till the puree thickens.
- Add the cut vegetables into this, cover and cook for few minutes.
- Add the italian seasoning and chilli flakes into this and cook for few minutes.
- Add butter and tomato ketchup and cook for few seconds.
- Check for salt and add if required.
- Add the pasta into this. Mix the sauce with the pasta. Sauce has to cover all the pasta.
- Add grated cheese into this.
- Yummy pasta is ready to be served.
