Ingredients
- Rice (Jeeraka shala or biriyani) - 1 cup
- Spices
- Cardamom - 3
- Cloves - 2
- Cinnamon - 1 inch stick
- Bay leaf - 1
- Pepper pod - 1 tsp
- Onion - 1 medium
- Ghee - 2 tbsp
- Cashew nuts - 8
- Raisins - 8
- Lime juice - 1 tsp
- Water - 1.5 cup
Procedure
- Clean the rice and soak for 15 minutes
- Cut onion into thin pieces lengthwise
- Heat ghee deep pan
- Fry raisins and remove and keep aside
- Fry cashews and remove and keep aside
- Fry half of the onions till it is brown. Remove and keep aside.
- Fry the spices
- Add remaining onion and fry till raw smell goes away
- Add rice to this and fry for 5 minutes.
- In a pressure cooker, boil water and required salt.
- Add the rice into the pressure cooker and cook the rice.
- Add lime juice.
- When the steam is completely released, open the cooker
- Fluff the rice. Move into a serving bowl and add fried cashews, raisins and onion.
- Yummy ghee rice is ready to be served with mutta curry or chicken curry or peas curry and raita
